Ingredients
Cake Method
- Grease a lined loaf tin and pre heat your oven to 180c
- Beat together the butter and caster sugar until pale and creamy, then add the eggs one at a time, slowly mixing through
- Add gin and mix thoroughly and then sift in the flour. Add the lemon zest and mix till well combined.
- Put the mixture in your lined loaf tin and put in the over for 45-50 minutes, check occasionally with a pick until it comes out clean.
Serving Suggestion
Perfect on its own with a cup of tea or with a scoop of vanilla ice cream.
Drizzle Method
- Mix the ingredients together and add sugar if needed to make a good icing consistency
- Once the cake is cool pour the drizzle over the top, the liquid will sink in and the sugar with form a crust over the top
